Scandi Influence

Separated by the North Sea, Scotland has strong historical, social and ecological ties to Scandinavia- it made sense to us to take influence from this when designing Greenstone Lodge. The colours we decorate with and the cosy feel in our rooms are a nod to the fact that we have more than our fair share of darker hours and inclement weather- but any excuse to Coorie in seems like a good one to us, and the huge move towards creating these lovely Hygge moments in our day is something we wholeheartedly embrace here in our little vegan B&B in the wilds of The Highlands.

Our plant based / vegan menu reflects this further, with influences drawn from our travels in Denmark as well as more traditionally Scottish dishes. Copenhagen is a treasure trove for foodies and we loved eating our way around the city looking for inspiration – from Smorrebrod in the Torvehallerne to Beyla’s tasting menu, we were spoilt for choice and have already enjoyed incorporating some of what we learnt there.

This year there will be further opportunities to join us for a cosy Scottish getaway as not only will we remain open until the end of November, but we will also have very limited special winter weekends to enjoy in December and February .
